If I use Connect my Mac to open Safari remotely and log into my online banking and download transactions, are my id and password keystrokes safe? Or are they clear text between my iPad and the Mac across my home wireless network? Is there any encryption?

In current version of Connect My Mac, the keystroke and screen data is NOT encrypted. Thus it's not safe if your connection is over public network. If you are only connecting within your home WIFI and the WIFI is protected by a strong password, then it's very hard for somebody to break in and capture your password since they cannot get on the WIFI network. In this case, you can use online banking over VNC. But generally it's not recommended.
